Helpful Tip from the Garden Geeks: Vegetables that can handle frost for early winter harvesting:
Kale, Collards and Brussels Sprouts can all handle quite hard freezes and can be harvested through December and sometimes into January, depending on where you live.
Parsnips, Salsify and Leeks can also handle some hard freezing. These do need to be mulched heavily to prevent the ground from becoming too hard to dig.
The Jerusalem Artichoke is also very hardy and the tubers can be dug and used any time they can be got out of the ground.
