German chamomile (Matricaria recutita) is an annual that grows 18 inches, and Roman chamomile (Anthemis nobilis or Chamaemelum nobile) is a low growing perennial, sometimes used as a ground cover. If your planning on making an herbal tea, remember that German chamomile has a sweeter taste and it grows better in clay soils. Harvest German chamomile flowers when the petals begin to bend backward and the center starts to turn brown.
