Many tea gardens include chamomile (Matricaria recutita), peppermint (Mentha piperita), spearmint (Mentha spicata), pineapple mint (Mentha suaveolens variegata), and lemon balm (Melissa officinalis). To make the tea, add one cup of boiling water to a tablespoon of fresh leaves, or a teaspoon of dried. Let steep for 10 minutes. Remember the leaves are best harvested before lunch because the leaves have moist of the essential oils in them right after the dew dries from them. Home made herbal teas make an amazing Christmas gift so don't forget to plant enough to dry and share!
